Tasting Notes

Pale golden with fine, long-lasting bubbles. Aromas of toasted brioche, honeyed rockmelon and tropical fruits rise from the glass. On the palate, a vibrant structure and gentle mousse carry through to a lingering, mineral-driven finish with elegant complexity.

In the Vineyard

The Chardonnay and Pinot Noir were sourced from the Lower Wairau Plains in Marlborough and hand-harvested at optimum ripeness. Sparkling wine requires freshness, so grapes are picked earlier than those for still wines, ensuring higher acidity and lower sugar. The cooler 2022 growing season in Marlborough helped retain this vital freshness and balance.

In the Winery

Produced in Hawke's Bay using the traditional Champagne method, this wine showcases the time-honoured craft of Méthode Traditionnelle winemaking. The Chardonnay and Pinot Noir were whole-bunch pressed, fermented separately with Champagne yeast, then aged in seasoned French oak barriques.

Following full malolactic fermentation, the wines were blended, and a dosage of wine, sugar and selected yeasts was added for the secondary fermentation in bottle. This slow in-bottle fermentation created the fine bubbles and complex aromas that define the style. After maturation, the wine underwent traditional riddling to collect sediment in the neck, followed by disgorgement and final corking under pressure with the classic cork and cage.

Cellaring Potential

Our Méthode Traditionnelle Brut NV may be confidently cellared for up to five years from release, gaining further richness and refinement with time.
