Lovely aromas of black fruits—Black Doris plums, blackberries and blackcurrants—all wrapped up in a deftly tailored oak robe.

At this stage, the palate has both freshness and fleshiness, which bodes very well for the future. The black fruit notes add juiciness, while the tannins build a firm structure.

This is not a heavy red and has genuine vigour and vitality. Taut, dry, earthy and new with a definitive palate squeeze from acidity and tannins. As this sensation fades the core flavours of boysenberry and plum then tobacco and wood smoke return. Occasional downpours dried up quickly in the persistent easterly winds.

Our vineyard team did their usual meticulous job of creating an open vine canopy, removing excess foliage by hand to allow air movement to dry the fruit and sunlight to reach the bunches. The canopy remained strong and healthy, allowing us to leave the fruit on the vines until optimum ripeness, without disease pressure guiding our harvest decisions.

In the Winery:

In the winery, each of the three varieties was destemmed and crushed separately into small open-top fermenters. A selected yeast instigated fermentation, with the rising ‘cap’ of skins initially hand-plunged four times daily. As alcoholic fermentation proceeded, the plunging regime was decreased to avoid over-extraction.

After a period of post-fermentation maceration to add structure and balance, the wine was racked, the skins gently pressed, and the wine settled before ageing in new, one- and two-year-old French oak barriques. After 12 months, selected barriques were blended and bottled without fining, then bottle-aged before release.

Vintage Notes

Harvest Period: 10–25 March 2025
Bottling: 12 February 2026
Composition: 42% Malbec, 30% Cabernet Franc, 28% Merlot
Alcohol: 13.5% ABV
Total Acidity: 6.2 g/L
pH: 3.65
Production: 400 dozen bottles

//cdn.shopify.com/s/files/1/0901/2822/0459/files/Brick-Bay-wines-Martello-Rock-2025-web-square-crop-transparent.png?v=1793924425
