Pharos aging gracefully.

Last week with a deliciously simple meal of grilled sirloin from Nosh Matakana with our own fresh horseradish, mashed potatoes with a little truffle butter and a rocket salad, the wine was a revelation. Decanted (as we like to do with all red wine) it still tasted fresh with little loss of the primary fruit characters. Plum, blackcurrant and cherry wrapped around soft velvety tannins, reinforcing our belief that the Pharos is indeed a wine built to last.
